This recipe provides a wonderfully healing and tasty meal for anytime of day. I think it's best for dinner as it's lovely and light.

Ingredients
​
1 English cucumber, peeled
2 medium-sized tomatoes, roughly chopped
1 clove of garlic
1/4 cup fresh basil, roughly chopped, more for garnish
1/2 tsp red pepper flakes
Salt and pepper, to taste
Squeeze of lemon juice on top (optional)

If you'd like to add meat to this dish try adding meatballs.

Method
​
Make the cucumber into noodles using a spiralizer or you can make fat strips using a vegetable peeler. Divide between two bowls and set aside.
Place the tomatoes, garlic, fresh basil, red pepper flakes, salt and pepper in a food processor and process briefly until you get a chunky tomato sauce.

Ladle it on top of the cucumber noodles and top with fresh basil and a squeeze of lemon juice (optional).

If you're adding meatballs, here's my cheat method; get 4 sausages (I prefer to get mine from the local butcher), cut open the casing and shape the sausage meat into small meatballs. Depending on sausage size, it's about 2-3 balls per sausage. Cook the meatballs in olive oil on a medium to high heat, turning frequently, for 3-5 minutes, until brown all over.
